Banana Nut Muffins Recipe

1/2 Cup Butter, softened
1-1/2 Cups Sugar
2 Eggs
1-1/2 Cups mashed ripe bananas (2 or 3 medium)
2 tablespoons 2% milk
1 teaspoon vanilla extract
2 cups all-purpose flour
1/2 teaspoon salt
1 cup chopped pecans 

1.)  In a large bowl, slightly melt butter and sugar until light and fluffy.  Add eggs, one at a time, beating well after each addition.  Stir in the bananas, milk and vanilla extract.  Combine the flour, baking soda and salt; gradually add to banana mixture just until moistened.  Stir in nuts.

2.) Grease and lightly Flour Muffin pan. (Or use cupcake liners.)

3.)  Bake 350 degrees Fahrenheit for 25 - 30 minutes until golden brown.  Check with toothpick inserted in center make sure it comes out clean.

4.) Cool for 10 - 15 minutes then remove from pan.

Yields 18 Muffins
